Bagel-pizza with egg

Homemade pizza is great. Super-easy homemade pizza is even better! I know making pizza dough can be fun and it feels great to make pizzas from scratch (and if you have a bread-making machine you can have it kneading the dough for you). However, if you want the simplest of pizza bases and want it quick, try using bagels.

It’s original and works a treat, especially if you are going to cook an egg inside that perfectly round hole. If you think about it, it’s just begging for it. This idea is not mine, I came across it in Baker by Nature. I changed the toppings slightly and of course you can add whatever you want as a bagel-pizza topping. I had just made a batch of homemade tomato sauce and thought it would go lovely on these. Pepperoni is a staple in everyone’s pizza in this house so I stuck to that. I wanted the pizzas spicy and decided to go for the wonderfully sweet and juicy Roquito, mine and my husband’s favourite chilli pepper (sorry, but jalapeños stand no chance!). I also added some Emmental cheese to the top of all the other ingredients to make sure it all gelled together nicely and to add an extra bit of ‘twang’. Finish with some dried oregano and black pepper. Yum! If only a bit naughty, I know.

This was a huge success in our house, with my eldest asking for a second one without having finished the first one.

A friend of mine asked me to post more children friendly recipes and I think this fits the brief perfectly. It also made the two adults in our house very happy, so everyone wins!

Instructions
  1. Pre-heat the oven at 200 degrees Celcius for fan oven (or 220 degress no fan, 400 Fahrenheit, Gas Mark 7).
  2. Cut bagels in half and spread the tomato sauce on top.

  3. Add the mozzarella cheese, the pepperoni slices, the Roquito peppers, the emmental and the oregano. Place the bagels on top of baking tray lined with baking paper.

  4. Carefully crack an egg in the middle.

  5. And black pepper to taste and bake in the oven for 15-20 minutes depending how you like your eggs and your base cooked.

    What a good idea! My grandchildren and I appreciate this easy and delicious family recipe. Furthermore it is good to “clean up” the refrigerator of those “leftovers” that already seemed they had no destination! And the “tomato sauce” Yum!
