Greek yoghurt, banana and honey with a posh granola
An indulgent and healthy start to the day made with creamy Greek yoghurt, a seed and nut granola, banana and a Manuka honey syrup

  1. Start by toasting the almonds and rolled oats in a hot frying pan.
  2. In the meanwhile chop the banana into small rounds.
  3. Prepare the honey syrup by adding a teaspoon of water for every teaspoon of honey. If you feel that it’s reached the right consistency before you add the last one, stop there.
  4. Roughly chop the pistachio kernels and dried cranberries.
  5. When the almonds and rolled oats are toasted add the cranberries, linseeds, sunflower seeds, chopped pistachios and chopped cranberries.
  6. Leave to cook in medium heat for a few minutes and add the brown sugar.
  7. To finish the granola, add the butter and let it melt so it coats everything. Let it cook for 2 minutes and remove so it cools down.
  8. Divide the chopped banana by the 4 bowls and cover with honey syrup and then add 2 tbsp greek yoghurt to each bowl.
  9. Top with the nut and seed granola.
